Tholi Ulundhu Sadham is a staple food in the houses of Tirunelveli and Cape districts. This becomes a complete meal when the rice is paired with Ellu Thuvaiyal and Aviyal. This offers nutrition in abundance to the young girls specifically during puberty. Tholi ulundhu is well known for its protein content, iron and folic acid which is essential for strengthening bones and uterus in every woman.
I always use broken black gram with skin intact while few people use whole black gram and few others use black gram without skin.

Ingredients for Tholi ulundhu Saadham / Karuppu Ulundhu Sadham / Black gram Rice:
Directions to make Tholi ulundhu Saadham / Karuppu Ulundhu Sadham / Black gram Rice:
1. Peel Garlic pearls.
2. Add salt and pressure cook the rice for three whistles, in a medium flame. Allow the pressure to release by itself and you may find the skin of the dhall collected over the top of the rice.
Ingredients for Ellu Thuvaiyal / Sesame seeds chutney:
Sesame Seeds - 1/4 cup or as required
Red chillies - 2 or as per your taste. I have used long variety chilli
Asoefotida - a pinch
Tamarind - a pinch
Salt - to taste
Directions to make Ellu Thuvaiyal / Sesame seeds Chutney:
Parboiled Rice - 1 cup
Broken Black gram dhall - 1/3 cup
Garlic pearls - 10 - 12
Salt - a generous pinch
Water - 3 cupsBroken Black gram dhall - 1/3 cup

Sesame Seeds - 1/4 cup or as required

1. In medium flame, dry roast sesame seeds till it pops up and the aroma arises.

2. Allow it to cool and dry grind it.

3. Roast Red Chillies in a teaspoon or less of sesame oil. Add roasted chillies, asoefotida, tamarind and salt and grind again.

4. Add water little by little till it gets the thick chutney consistency.

Serve Tholi ulundhu saadham with ellu thuvaiyal, Aviyal and appalam. Add sesame oil to the rice, mix it with the Sesame seeds chutney and enjoy.
Note:
Tholi ulundhu Saadham / Black gram rice: * There are variations in cooking this Black gram dhall rice, few people cook the rice along with a handful of shredded coconut. * Few people may not want to add garlic, they could lessen the number or could try cooking with asoefotida. Asoefotida may help you in getting rid of the intestinal gas. However, I would recommend the use of garlic as the original recipe calls for. * You can substitute rice with millets too. Ellu Thuvaiyal / Sesame Seeds Chutney: * Grind Sesame seeds first to get a fine powder of it. If added with other ingredients, sesame seeds will not be powdered well. * You could add fresh raw coconut for a good yield. At times, I include coconut to this thuvaiyal. |
